From the soft pressing of the Passerina, one of the finest native vines of the Abruzzo Region, Cantina Tollo produces this sensational IGP wine of the Terre di Chieti. The origin is that of the vast IGP area in the province of Chieti in Abruzzo. The harvest takes place in October. The vinification after destemming and cryomaceration of the pressed at 5/8ºC, continues with the soft pressing and control of the fermentation temperature of the clear must. Finally, the aging that develops on the yeasts in cement and steel tanks.
Characteristics of this wine Passerina
The appearance of the wine has a pale straw-yellow color with slight greenish reflections. The aroma is broad and fruity with notes of peach, apricot and grapefruit; the floral scents recall wisteria and lime and over time takes on a distinctly mineral character. The taste is broad and full, with excellent freshness, good structure and long persistence.
