Ansonica is a Tuscan white wine made exclusively from Ansonica grapes: the vineyards are located at an altitude of 90 metres above sea level, on sandy, silt-rich soils. The grapes are harvested when fully ripe towards the end of September from vines with an average age of 15 years; They are then stored for 7-8 days in a ventilated cellar at 10°C, half of which are destemmed and fermented with the skins, and half of which are processed in a closed press where they macerate for 12 hours. The grapes are then gently pressed to extract the free-run juice, which is left to settle for 72 hours at a controlled temperature. Fermentation is started using selected yeasts and after about a week the two halves are combined. Ageing takes place in steel for 3 months on the fine lees.
Characteristics of this Tuscan wine
It is a dry white wine with an intense straw yellow colour and golden hues. The nose is striking with notes of broom, citrus and aromatic herbs. Dry on the palate, pleasantly fresh with a long, fruity finish.
Recommended pairings with this Ansonica white wine
To be drunk young, within 3 years of harvest. Perfect with seafood, shellfish, white meats and cheeses. Serve at a temperature of 8-10°C.
