This red wine from the Sicilian winery Duca di Salaparuta is made from 100% Nerello Mascalese grapes. The vineyards are located approximately 650 meters above sea level on sandy, lava-based soils. After manual harvesting, the grapes are destemmed and alcoholic fermentation takes place. After a few days, the skins are stirred to maximize the extraction of anthocyanins and polyphenols. After fermentation, the wine remains in contact with the skins for five days. The final aging phase takes place partly in cement and partly in oak barrels, followed by a further two months in bottle.
Characteristics of this Sicilian wine
It has a bright red color: the olfactory notes evoke red fruits, balsamic and mineral notes but also vanilla and spices. The palate is elegant, with a delicate tannic texture and a long persistence.
Recommended pairings with this Sicilian red wine
Particularly suitable with red meat dishes, braised meats, and game. Try it with medium- and mature cheeses. Serve at 14-16°C.
