The “Nawari” from the Sicilian Winery Duca di Salaparuta is the first Pinot Noir grown on the volcanic soils on the slopes of Etna; it is produced with pure Pinot Noir grapes, grown on land at about 600m u.s.l. At the end of the manual harvest which takes place at the end of September, destemming and maceration take place at a controlled temperature for 6-8 days, with subsequent 15 months maturation in French oak barriques. The refinement instead takes place in the cellar after bottling for 2 months, at a controlled temperature, in order to develop the bouquet.
