100% Pinot Noir cultivated in the area of Caldaro lake. This wine is the expression of the interesting dialogue between the vineyards planted at 400 meters elevation and those located 600 meters above the sea level. The soils, with their south-east and south-west exposition, are composed by limestone and porous stones. The wine making considers 10 days maceration in contact with skins, followed by fermentation in steel at controlled temperature. The malolactic fermentation and the aging are developed both in steel and in 22hl oak barrels.
Features of the “Pinot Nero Alto Adige DOC”
Shiny ruby red colour. Its scent recalls red fruits, like cherry and raspberry enriched by a light spicy sensation of white pepper. The taste is rich and structured. It is characterized by delicate tannins and a fresh and persistent final.
Recommended food pairings while tasting this red wine by Elena Walch
Perfect with structured main dishes, red meat, game and spicy cheeses. An interesting solution with Mediterranean main dishes or starters. It has to be served at 18°C in a high, wide wine glass that allows oxygenation.
