This Sicilian wine from the Nicosia Winery is a blend of autochthonous Carricante and Catarratto grapes from vineyards located at an altitude of 720 m usl, on soils of a lava nature, characterized by a conspicuous presence of minerals. The manual harvest takes place around the second week of October and leads to the collection of bunches which are then subjected to the phenomenon of cryomaceration for 24 hours before pressing; fermentation follows for about 20 days, at a controlled temperature. The refinement takes place in steel tanks on fine lees and then for 2 months in the bottle.
Characteristics of this Sicilian wine
The organoleptic examination shows a straw yellow color but above all with an intense olfactory bouquet of yellow pulp fruit and wild flowers. On the palate it impresses with its minerality and freshness.

Excellent with all fish dishes, especially fried foods and sushi. Serve in a tapered glass at a temperature of 10-12 ° C.
