The Vespa Bianco is the flagship of the company and it was produced to exalt the power and the evolution that a great white wine from Friuli can achieve. In its best expression it can surpass the expectation that are remarked by its ampelology conformation. It is a complex and enduring wine. It is composed by 50% Chardonnay, 50% Sauvignon Blanc. These vines are cultivated on calcareous marl soils and by using the Guyot method.
Characteristics of this white wine
It has a wonderful balance between the mineral taste and a citron flavor that can evolves in clover, apple and ripe pear aromas. Its tannic and acid structure make this wine very remarkable and enduring. In fact this wine can be aged for 7-10 years from the harvest. The Chardonnay and Sauvignon grapes are made separately: 50% in oak barrels of 4000 liters and the remaining 50% in stainless steel. The picolit ferment in tanks of 500 liters. The malolactic fermentation takes the 60% of the product. After the wine making process the wine rests on lees, every grape in its tank, for almost 1 year. Finally they are mixed and they have to rest for a further year in bottle.
Suggested pairings with the Vespa Bianco Bastianich
The perfect pairing is with baked turkey or chicken or cooked in humid with oranges. It is very good also with grilled white meats flavored with herbs sauces. It is good as appetizer and with vegetables soups. It has to be served at 10-12°C in Renano wine glasses.
