This wine is a blend of two local vine varieties of Veneto: 60% Tai, rare and traditional variety of the hills and 40% Sauvignon, international grape that finds in the region its ideal conditions. The vineyard is located on the hills of DOC Breganze, in the north of Vicenza, were the river Astico flows. The lands are mainly characterized by volcanic soils and plains full of gravel. The wine making is started by cold maceration, followed by soft pressing. The aging is managed in steel for some months and concludes the process.
Features of this wine produced by Maculan winery
Clear straw yellow colour enriched by an intense scent that recalls mature and tropical fruits typical of Sauvignon. The taste is dry but full; softness is well balanced by sourness. Good aromatic persistence.
Recommended food pairings while tasting Bidibi
Perfect wine for happy hours, it goes on well also with soups, main dishes and delicate fishes. It has to be served at 10°C in a high, wide wine glass.
