The Cecchi winery produces this sensational Vernaccia di San Giminiano which boasts the DOCG. The grape variety used for its vinification is 90% Vernaccia di San Gimignano, to which other complementary and native varieties are added wisely and according to tradition, never exceeding 10% of the blend. The origin falls in the municipality of San Gimignano which also gives it the DOCG. The vinification takes place in white, with cold pre-fermentation maceration. Fermentation takes place for 15 days. Finally, the refinement of the wine which lasts for 3 months in the bottle.
