The selection of the grapes during the harvest is really careful in order to obtain always the complete maturation. Traditional fermentation (as the ancestors did in the past, with temperature that touch 30°C). The maceration last for 15-30 days and aims to soften the tannins. 30 months aging in oval barrels made of French oak (50 hl). This wine takes its name from a lake that influence the climate of this area. The soil is mainly composed by clay.
