The term "Folàr" in Veronese dialect means "punching down, an oenological practice used for red wines and applied to this Lugana, which consists in repeatedly immersing the cap of marc in the must, so that during the development of the alcoholic fermentation can be enriched with the noble components of the skin, increasing the structure and longevity of the wine. The variety of grape used is that of 100% pure Trebbiano di Lugana. The origin of the grapes falls within the wide DOC Lugana del Veneto. The vinification is the result of the pressing of Trebbiano di Lugana grapes in purity, harvested when perfectly ripe during the first ten days of October. After a soft pressing of the grapes, the must is subjected to a cold maceration protected by oxygen, then it ferments slowly with selected yeasts. Refinement in steel on the fine lees follows until the day of bottling.
Lugana Folar DOC Santi
An intense straw yellow colour. The nose is expressed with notes of white pulp fruit, floral scents and a mineral imprint. The taste on the palate is fresh, savory, with a long and almond finish.
