This red wine from the Cecilia Beretta winery is born from a blend of Corvina, Rondinella, Corvinone and Negrara grapes. During the harvest, only the best grapes are carefully selected: followed by pressing and destemming with maceration on the skins for approximately 15 days. The product thus obtained remains in steel until February and then “re-screens” on the Amarone pomace. A new fermentation begins which will increase the final structure of the wine, as well as its olfactory profile. The refinement phase takes place in barrique and after 12 months it is assembled and bottled.
Characteristics of this Valpolicella Ripasso wine
It has a very intense red color, with violet reflections. On the nose it is striking for delicate notes of morello cherry, currant and blueberry but also liquorice and toasting notes. On the palate it is rich and well balanced, with excellent persistence.

Perfect with typical Veneto dishes: radicchio risotto, polenta, red meats and satgionato cheeses. Serve at a temperature of 16-18°C.
