From the Montevegro vineyard, 23 hectares of surface area located at approximately 350 m above sea level, this red wine from Cantina Pasqua is born: the soil of this hill is particularly calcareous and guarantees excellent minerality. The grapes are harvested manually and chosen carefully: this is followed by soft pressing and fermentation in steel at a controlled temperature of 20-22°C. The final maturation phase takes place in 500 liter barrels and 225 liter French oak barriques for a period of 18 months.
Characteristics of this Valpolicella wine
This wine from Veneto is particularly intense and complex. Ruby red in colour, the nose is striking for notes of tobacco, undergrowth and balsamic hints. On the palate it impresses with a very fine tannin and aromas of cherry, cloves and coffee. The finish is long and persistent, with a spicy aftertaste.
Recommended pairings with this Venetian red wine
Try it with dishes based on red meat or game, mushroom risotto. Serve at a temperature of 18-20°C in the large glass to promote oxygenation.
