The Karria DOC is a red young wine. The origin area is the Morro d’Alba hamlet where the soil is clay and calcareous. The grapes used are the “Lacrima” ones. This particular vineyard gives freshness to the palate and rose and violet aromas to the nose. It has to be drunk young when it is at its best. There is the grapes picking and the destemming and the pressing followed by fermentation and a 5 days maceration on peels. At the end there is the racking off and the malolactic fermentation. The aging period lasts 4 months in bottle. If well-conserved the Karria DOC can be aged up to 2-3 years.
