The result of the blend of 70% of Corvina Veronese grapes, 20% of Rondinella and 10% of Molinara. The origin is the classic one of Veneto, in the DOC area that guarantees the origin and the Denomination of Controlled Origin. For the vinification the technicians develop this wine following the traditional technique of Ripasso, the must is passed on the freshly pressed Amarone marc. This technique slightly increases the alcohol content and enriches the organoleptic potential of the wine, which then ages 12 months in Slavonian oak barrels of 30 hectoliters.
Characteristics of this Valpolicella Ripasso Doc
The wine has an intense ruby red color. The nose is fine and complex, with vinous tones and well-defined notes of cherry and cocoa. The taste in the mouth shows a good structure, with a pleasantly fruity aftertaste with light spicy notes.
Recommended pairings tasting this red wine
A perfect wine with first courses and cheeses of good seasoning, excellent with the traditional pastizada de caval (horse stew). The optimal serving temperature is 16ºC.
