Valpolicella Classico Superiore DOC is a red wine produced by Allegrini winery. Grapes used to produce it are 65% Corvina Veronese, 20% Rondinella, 5% Molinara, while 10% comes from ancient vineyards owned by Cantina Allegrini. Winemaking consists of a fermentation of 7-8 days in stainless steel vessels, then wine is moved in other stainless steel vessels for 18 months. Bottle refinement lasts 6 months.
Characteristics of Valpolicella Superiore DOC
It displays a deep ruby almost garnet red, with a subtle orange vein, due to the long ageing. Intense bouquet, which merges spicy fruits, black cherry and raspberry notes. It’s a well-structured wine, full-bodied and robust in taste.
Recommended pairings while tasting this red DOC wine
It can be perfectly paired with white and red meat and aged cheeses. It should be served in a wide glass at ambient temperature. We suggest to uncork the bottle 30-60 minutes before serving.
