This red wine from Cantina Pasqua is made from a blend of Corvina, Rondinella and Corvinone grapes. After the grapes are harvested by hand, they are left to dry for three months in the fruit cellar. This is followed by pressing and alcoholic fermentation in steel tanks for about 30 days at a controlled temperature: throughout this phase, punching down is carried out to promote the extraction of tannins and colouring agents. Once this procedure is complete, the wine is placed in French oak barriques where malolactic fermentation takes place. After ageing for 18-20 months, the wine is bottled and refined for a further 4 months.
Characteristics of this Veneto wine
It has a very intense ruby red colour. The bouquet is reminiscent of red fruits and spices, as well as cocoa and tobacco. On the palate, it impresses with its enveloping tannic texture and long, persistent finish.
