This red wine from Cantina Pasqua comes from the Montevegro vineyard: the vines cover an area of 23 hectares and are located on top of a hill at 350 metres above sea level, on clayey and calcareous soils that give the wine excellent minerality. The grapes are carefully harvested by hand and then left to dry in crates for about 4 months. This is followed by pressing and cold maceration, with fermentation in temperature-controlled steel tanks for about 40 days. The wine is aged in French oak barrels for 24 months.
Characteristics of this Amarone
It has a very intense ruby red colour and a striking, rich bouquet of red fruits, cinnamon, pepper, thyme and sage. It has a very pronounced tannic texture on the palate.
Recommended pairings with this red wine from Veneto
Excellent with roast or grilled meat, stewed red meat, meat or mushroom risottos and game dishes. Serve at a temperature of 18-20°C in a balloon glass to encourage oxygenation.
