Alteo Amarone della Valpolicella DOCG represents one of the greatest expressions of the production of the Fasoli Gino winery and one of the symbolic wines of Valpolicella. It is a highly prestigious wine made from selected native grapes from Corvina, Corvinone, and Rondinella, grown in the most suitable vineyards in the area and processed using the traditional wilting method. Alteo's production involves a manual harvest with careful selection of the best bunches between late September and early October. The grapes are then left to wilt for over four months in small wooden crates, a crucial step that concentrates sugars, aromas, and structure. Subsequently, fermentation takes place in stainless steel for approximately 25–35 days, followed by a long aging in barriques that lasts at least three years. The wine completes its journey with further bottle aging before marketing, thus achieving balance and complexity.
Characteristics of this Alteo by Fasoli Gino
On organoleptic examination it appears with an intense and bright garnet color. The aroma is rich and enveloping, with notes of fruit passita, sweet spices, black pepper, licorice, coffee and vanilla. On the palate it is powerful yet elegant, characterized by great structure, softness and a slight sweetness that rounds out its taste profile, with a long and persistent finish.

As for pairings, Alteo pairs perfectly with rich and structured dishes such as braised meats, game, important roasts, pappardelle with wild boar ragù and tasty risottos. It is also ideal with aged cheeses and preparations based on truffles or dark chocolate in the most creative versions. The recommended service temperature is 16–18 °C.
