Wine description

“Dolso” is an organic red passito wine of great personality produced by Fasoli Gino, which takes its name from the Veronese dialect term “dolso”, meaning “sweet”. This is a limited-edition wine, whose production depends on the quality of the vintage, and is made from selected Corvina and Corvinone grapes, sourced from hilly vineyards in the Illasi Valley. Winemaking involves hand-harvesting the grapes between late September and early October, with a selection of the bunches best exposed to the sun. After the harvest, the grapes are subjected to a long natural wilting, which concentrates sugars, aromas and structure. Fermentation takes place in temperature-controlled steel tanks for approximately 10–15 days; during fermentation, when a good amount of sugar is still present, the process is partially blocked by racking and cooling. The wine then ages in French oak barriques for about 9 years, acquiring complexity and aromatic depth.

 


Characteristics of this wine from the Veneto

On organoleptic examination it appears bright and bright red. The bouquet is rich and spicy, with notes of cloves, cinnamon, black pepper, ripe red fruit and shades of leather. On the palate it is full, warm and soft, with a well-balanced sweetness from a slightly spicy tannic component and a good freshness that supports its structure.

 


Recommended pairings with this red wine from Fasoli Gino

It pairs perfectly with traditional dry desserts such as sbrisolona, cantucci and zaletti, but also with aged and blue cheeses. It is excellent with dark chocolate and represents a meditation wine, ideal to enjoy slowly. The recommended service temperature is 16–18 °C.
