This Veneto red wine is born from the vineyard located in the hilly area of Nuj, Castelcerino di Soave: the grapes used to produce this wine grow at an altitude of 150 m above sea level, with south-southwest exposure. To produce this wine from Cantina Coffele, a blend of Merlot, Cabernet Sauvignon, and Cabernet Franc grapes is used: the Merlot grape is harvested by hand and lightly overripened at the same time as the Cabernet Sauvignon; this is followed by crushing, fermentation for 12 days at a temperature of 30-32°C, followed by maceration on the skins for about ten days. The final aging phase takes place in 225-liter oak barrels for 24 months.
Characteristics of this wine from the Veneto
It has a rich ruby red color with garnet reflections and evident glycerin arches. The olfactory notes recall notes of vanilla, spice, cherry and cooked plum. On the palate it is warm, rich and with sustained but harmonious tannins. The finish is long and persistent with ripe fruity notes.
Recommended pairings with this red wine from Cantina Coffele
Try it with fine meats, game, roasts, and aged cheeses. Serve at 16-18°C.
