The Valpolicella DOC “La Corte del Pozzo” of the Gino Fasoli winery is made from Corvina, Corvinone and Rondinella grapes grown on the hills of the Illasi Valley, on predominantly limestone soils. The harvest begins at the end of September with manual harvesting and selection of the best grapes. Some of it is left to wilt for about 15–20 days, while the rest is vinified fresh. Fermentations take place separately: fresh steel grapes and those dried in wooden barrels. After about 10–12 months the wine is bottled and left to refine for another 5–6 months.
Characteristics of this wine from the Veneto
In the calyx it has a bright and compact ruby red colour. Notes of red fruit, jam of small fruits and light spicy nuances emerge on the nose. In the mouth it is dry, velvety, harmonious and of good structure, with a balance between tannins, acidity and ripe fruit.
Recommended pairings with this red wine from Fasoli Gino
It pairs very well with tasty first courses, pastas with game or mushroom sauces, grilled red meats and medium-aged cheeses. The recommended service temperature is between 15 and 18 °C.
