This blend by Domini Veneti is composed by 70% Corvina, 15% Corvinone, 15% Rondinella. The two biological vineyards are located in the traditional area of Valpolicella: the first is in the valley of Negrar, 250 meters elevation, while the second is in Mazzurega, 450 meters above the sea level. The harvest is planned at the end of September and it is managed manually. The wine making starts with the elimination of stalks, followed by soft pressing. The fermentation, set between 25-28°C, is followed by 7 days maceration.After the malolactic fermentation, the aging is managed in steel tanks. Natural stabilization.
Features of this biological red wine
Ruby red colour with violet shades. Its perfume is wide, fruity and spicy. The taste is dry, warm and medium-structured.
Recommended food pairings while tasting Valpolicella Doc
Excellent with pasta, cold cuts and medium-aged cheeses. It has to be served at 16°C.
