This wine is made by 75% of Corvina and 25% of Corvinone grapes with a very little percentage of Rondinella all picked at the end of September. The vineyards are cared in all the passages. The trees are pruned during winter time to balance the production of the grapes. The integrated pest management is applied to keep the natural balance of the vineyard. It is also applied the permanent grassing to guarantee an efficient erosion. There is a cold maceration at 5°C for 3 days to extract the polyphenolic characteristics. It follows the steel fermentation with a gradual thermic augmentation from 20-22°c to 28-30°C. There is a short passage in French barrels of first and second passage and it follows the bottling in March.
Characteristics of the red Valpolicella Classico
It has an intense ruby red color with deep garnet reflections. The smell is remarkable with black fruits with a dry, sapid and harmonic taste with a very berry aroma.
Suggested pairigns with this BOLLA wine
It is perfect with roasted white meats, with aged cheeses but not spicy and with flavoured courses. The ideal service temperature is 18°C in a Ballon wine glass. The proof is 12,4%.
