The Valpolicella Classico Superiore of the Zenato winery is produced with 85% Corvina, 10% Rondinella and 5% Corvinone grapes coming from the S.Ambrogio vineyard in Valpolicella. The exposition is south-east and south-west at 250-300 meters above the sea level. The soil is clay and rich of stones. The cultivation method used is the Guyot and the density is 5000 trees per hectare. The average years of the vineyards is 15. The profit is 100 quintals. There is a manual picking of the grapes in the first decade of October and it follows a destemming and the maceration for 10 days in stainless steel tanks. After the alcoholic fermentation the wine is separated from the peels with a soft pressing. It rests for 12 months in oak barrels.

It has a typical ruby red color. The smell is delicate, with marasca cherry and berries aromas. The taste is mineral, dry, velvety and structured.
