This Franciacorta rosé Monique from Cantina Lo Sparviere comes from the use of Pinot Noir grapes from Provaglio d'Iseo: the vineyards are located at 250 m above sea level on marly soils with a prevalence of silt and clay. After the manual harvest in late August-early September, the bunches are placed in a refrigeration cell for 24-36 hours: This way, all the grape's distinctive aromas are preserved. Macerazone of the grapes follows in the press to extract the right shade of color from the skins; static decanting and fermentation follows, taking place partly in steel and partly in small woods. It is aged in the bottle on the lees for 24 months.
Features of this Franciacorta Rosé Monique
It has a very delicate salmon pink color with a very thin bubble. The olfactory profile recalls rose water and red fruits. On the palate, it is elegant, rich in structure, and has good acidity.
