Desèa Carignano del Sulcis DOC originates in the heart of lower Sulcis, in the far southwest of Sardinia, an area characterized by sandy and calcareous-clayey soils and a Mediterranean climate strongly influenced by the proximity of the sea. The vineyards, grown in breezy hilly areas, allow for healthy, well-ripe grapes, ideal for expressing the typical freshness of Carignano in a more immediate and contemporary version. Winemaking is designed to preserve the fragrance of the fruit and the natural drinkability of the wine. The grapes, carefully harvested and selected, are destemmed and subjected to temperature-controlled steel fermentation, with maceration on the skins lasting approximately 8 days. This step allows a correct extraction of color and aromas without excess tannins. Once alcoholic fermentation is complete, the wine is aged exclusively in steel and concrete tanks, without the use of wood, so as to maintain the varietal purity and expressive freshness of Carignano intact.

On organoleptic examination, the wine appears with an intense and luminous ruby red color. On the nose it offers a fine and fragrant profile, with hints of ripe cherry, small red fruits and delicate floral notes, accompanied by a slight reference to the Mediterranean scrub. In the mouth it is soft and harmonious, with well-integrated tannins and a lean but balanced structure. The freshness is very present and supports the drink, while the finish is clean, fruity and slightly savoury, with good persistence.

As for pairings, Desèa is a very versatile wine suitable for daily Mediterranean cuisine. It pairs well with first courses with meat sauces, pastas with light ragù, unstructured roasts and white meats. It is also interesting with medium-aged cheeses and rustic dishes of Sardinian or Italian tradition, thanks to its freshness and ease of drinking. The ideal serving temperature is around 18 °C.
