The Carignano del Sulcis DOC Riserva “Rocca Rubia” from the Santadi winery is made from Carignano grapes grown in the most suitable vineyards of lower Sulcis, on sandy and calcareous soils particularly suitable for growing this grape variety. Harvesting is manual and takes place between early September and mid-October, followed by fermentation in temperature-controlled stainless steel tanks for about fifteen days, with maceration on the skins and frequent reassembling to promote the extraction of polyphenolic substances. In December, the wine is transferred to fine-grained French oak barriques, where it ages for about twelve months, followed by a further six months of bottle aging.
Characteristics of this Sardinian wine
In the glass it has an intense, almost impenetrable ruby red color. On the nose it expresses deep and complex scents of blackberry, blueberry, myrtle, vanilla, leather and licorice, accompanied by elegant Mediterranean spicy notes. In the mouth it is wide, velvety and structured, with soft tannins, great aromatic persistence and a rich and enveloping finish.

It pairs very well with red meats, game, wild boar, roast porchetto, mushrooms and aged cheeses, especially ripe Sardinian pecorino. The recommended service temperature is between 16 and 18 °C.
