Cannonau di Sardegna DOC “Noras” from Cantina Santadi is made from Cannonau grapes with a small percentage of Carignano, grown in the lower Sulcis area on sandy soils mixed with granite decay. The harvest is manual and takes place at the end of September: this is followed by destemming and soft pressing, followed by fermentation in stainless steel tanks at controlled temperatures for approximately 12–15 days, with maceration on the skins and frequent reassembling to promote the extraction of polyphenolic substances. The wine then undergoes malolactic fermentation and ages for about six months in French oak barriques, followed by a further six months in the bottle.
Characteristics of this Sardinian wine
In the glass it has an intense ruby red colour tending towards garnet. Complex aromas of blackberry, blueberry, sweet spices, tobacco and chocolate emerge on the nose, accompanied by typical Mediterranean notes. In the mouth it is warm, soft and enveloping, with elegant tannins and an intense but balanced structure.
