The "Senior" Valdobbiadene Prosecco Superiore DOCG Extra Dry Millesimato of the Bortolomiol Winery is produced with 100% Glera grapes grown in the vineyards of the farm located in the hills of Valdobbiadene. After the manual harvest, which takes place in the second half of September, the wine is vinified in white by soft pressing with primary fermentation at controlled temperature and with the use of selected yeasts. The fermentation takes place at 25-30 days while the final aging lasts 1-3 months.
