Thanks to the experience dating half of century, the vinification of the Pinot Grigio Alto Adige is made by the Santa Margherita winery, which uses this vine to convert it in a sparkling version by the classic method of bottle re-fermentation. The use of the vines located in the higher hills, together with the farmer know how, has created this wine which is original and seducing. This wine is a Brut wine produced by the classic method of vinification with exclusively Pinot Grigio grapes. The grapes come from the Alto Adige and they are cultivated on 4000-5000 meters above the sea level. The soils are calcareous and there is also some clay on the surface. The cultivation method is the classic Guyot with a density of 5000 trees per hectare. The grapes harvest takes place in August up to the beginning of September. There is the soft pressing of the grapes and the immediate removing of the peels. The fermentation occurs in stainless steel tanks for 15 days at 16°C. It follows the aging period for three months and the following fermentation on yeasts. The re-fermentation takes place in bottles at 10°-12°C for at least 14 months.
Characteristics of the Pinot Grigio Metodo Classico Alto Adige DOC
This sparkling wine is elegant, complex, pleasant and sensorial. It has an intense straw yellow color with a thin and persistent perlage which is the anticipation of a vibrating and rhythmic aroma characterized by white pulp fruits, dry fruits and officinal herbs. On the palate it is dynamic thanks to the freshness and sapid taste which is able to makes longer the crispy fruity aromas smelled.

The Pinot Grigio Metodo Classico wine is the perfect wine for the appetizer. It is perfect with starters too and vegetables and fish main courses. It has to be tasted also with exotic cooking. It has to be served in high and tapered wine glasses at 6°C.
