The traditional wine making process of the refined Pinot Nero Maso Reiner DOC of the Kettmeir winery starts with the maceration on peels and a progressive increasing of the fermentation temperatures which starts from the room temperature until 25-27°C where the must spreads all its deep aromas. The starting temperature permits the extraction of the colored substances of the Pinot Nero and the stabilization of themselves with the tannins of the grape. At the end of the fermentation the young wine is poured into wood barrels of 30hl where it ages for 12-15 months. This wine is made by 100% Pinot Nero grapes.
