From the vinification of 100% pure Carricante grapes and raised within the company limits of the Castiglione di Sicilia estate. The finest grapes are harvested during the first week of September. Vinification involves cold maceration for about 24 hours and subsequent static purification. Fermentation takes place in French oak barrels for about 40% of the mass; the remaining part ferments in a concrete tank. The wine ages 12 months on the lees in wood for about 40% of the mass; the other part ages in a concrete tank.
Etna Bianco Contrada Calderara DOC’s features
A golden yellow color. Scent has hints of lemon blossom, elderberry, chamomile, bergamot, sage and fresh oregano with white peach and yellow plum. Taste on the palate releases saline vitality that enhances the richness of the finish.
