From the grapes of Cerviano-Merli, from which it takes its name, comes this Barolo from Marziano Abbona. It is a red wine with remarkable structure and depth, which reveals its aromas over time and which is naturally predisposed to aging. After the harvest, we proceed with destemming and pressing, followed by film maceration for 24 hours; then spontaneous alcoholic fermentation begins with indigenous yeasts and in contact with the steel skins. Once the malolactic process is over, the final aging phase in Slavonian oak begins for 38 months. The wine rests further in the bottle at a constant temperature of 14°C for twelve months before being marketed.
Characteristics of this Piedmont wine
It has a ruby red color and is striking for its particularly complex olfactory profile: berries, moss, balsamic herbs. On the palate it is austere, elegant with firm tannins.
