The Barbaresco "Sanavento" DOCG from Cantina Enrico Serafino is produced with 100% Nebbiolo grapes harvested by hand in the vineyards located between Barbaresco, Neive and Alba, in the province of Cuneo. After harvesting by hand, the bunches are carefully selected and cooled with carbonic snow in order to avoid oxidation. Then proceed with destemming and soft pressing, all without the use of augers to safeguard the characteristics of the cluster. The must is cooled before the fermentation process, to preserve its characteristics. The maceration takes place with the practice of délestage and, partially, with the submerged cap technique for over 20 days. The aging takes place in oak barrels for 20 months.

On the organoleptic examination, this Piedmontese wine shows an intense ruby red color with garnet reflections. The nose has hints of licorice and tobacco, spices and leather. The mouthfeel is fine, velvety, structured and well balanced, with velvety tannins and a long finish.
