Ribolla Gialla "Roncalto" from Azienda Agricola Livon is produced in the vineyards of Ruttars, in the municipality of Dolegna del Collio. The vine used is Ribolla Gialla, cultivated on soils of marl and clay. The harvest is done exclusively by hand in boxes, with cold maceration and subsequent cleaning of the must. The fermentation takes place in steel tanks and the product obtained remains to mature in the same containers for a duration of 8 months. It ends with bottling and further aging in bottle.
