Wine description

The origins of this sensational Prosecco di Valdobbiadene are very important. On the shore of the Cozzuolo at San Mor  where the territories reminds the ancient passage of Saint Mauro the Benedictine, Fabio Zardetto and Riccardo Cotarella have found the inspiration and the character for a new sparkling wine which celebrate friendship and it re-found the harmony between man and nature. The grapes are left ripe on the tree then the best bunches are manually harvested. The vinification doesn’t allow the addition of sugars but only a slow and natural fermentation that makes the  DOCG Conegliano Valdobbiadene Prosecco Superiore a great wine. A memory of the slopes protected by the wind where the serenity is already meditation.  The prosecco Viti di San Mor is a millesimato produced by 100% Glera grapes cultivated in the San Mor area in the Cozzollo and Vittorio Veneto hamlets. The manual harvest takes place in the second half of September after a careful selection.

 

Characteristics of the spumante Viti di San Mor DOCG

The straw yellow color has fine golden reflections. The perlage is also fine and persistent. The smell is springy with floral aromas. There is a remarkable aroma of green apple and pear with citrons hints.  The taste is fresh and clean with a determinate acidity with a mineral aroma which makes it more refined with an important drinkability and pleasantness.

 

Suggested pairings with the Valdobbiadene DOCG

This spumante di Valdobbiadene DOCG of Zardetto has to be served in a high and tapered wine glass at 9°C.  It can be matched with bakery, light risotto and grilled vegetables. It is perfect also alone.
