From the skilful vinification of 100% pure Pinot Noir grapes that the Cesarini Sforza Winery vinifies within its company limits. The origin of the grapes falls in the area of the upper valley of Cembra, in Trentino. For the vinification the grapes are harvested manually in small containers in the first decade of September and pressed whole in the marmonier. The different selections of Pinot Noir age on their lees and partially carry out the malolactic fermentation. In late spring the cuvée is made, an extraordinarily important moment for the quality of the classic method. Before summer, with the draught begins the long journey in the bottle in which, in addition to the second fermentation, yeast will accompany the sparkling wine for at least 48 months towards the time of disgorgement and then rest in the cellar for another 3 months before marketing.

As for the aspect of the organoleptic examination, the wine has a straw yellow color, with a fine and persistent perlage. The scent has fruity hints typical of the Pinot Noir grape. More complex, warm and spicy sensations complete a bouquet where you can recognize small red fruit, pepper and barley. The taste that is appreciated sipping this sensational Spumante characterized by a delicate perlage, but thick completeness to a deep, scratchy palate. Rich in persistence the 1673 Noir Nature runs in depth exalting itself to the maximum in its extraordinary saline component.

Trento DOC perfect as an aperitif, it goes well with any type of leavened dough. Excellent with pizzas, focaccia, crostini of any type. The optimal serving temperature is 6ºC in a high and tapered glass.
