The vinification of 100% pure Chardonnay grapes. The origin lies in the area of the Maso Sette Fontane, Valle dell'Adige, in Trentino. For vinification the grapes are harvested manually in small containers in the first decade of September and pressed whole. Only 50% of the must is selected for the Riserva Aquila Reale and rests in the cellar in contact with its lees in small French oak containers. During this period most of the wine undergoes malolactic fermentation. In late spring the cuvée is made that will rest until summer waiting for the draft. It will then be the days, months and years to perform that evolutionary miracle of scents, aromas and sensations that with a respectful disgorgement and the following 6 months of waiting before being put on the market will be exalted in the glass.

The aspect evidenced by the organoleptic examination, this sparkling wine Trento DOC appears an intense straw yellow color, with a very fine and persistent perlage. The nose expresses a mineral bouquet that blends perfectly with notes of candied fruit and bread crust. The taste leaves a trace of small pastry, embellished with hints slightly citrus, opens to a harmonious taste, long, slightly sapid and extraordinary elegance.

A glass of this sparkling wine of great refinement is ideal to accompany any course of the culinary tradition of the north. Rich in important and structured flavors. Excellent throughout the meal, it goes well with great first courses. Excellent with a risotto that with stuffed pasta, even sea. The optimal serving temperature is 6ºC in a glass high and tapered.
