Solais from Cantina Santadi is a Metodo Classico Brut obtained from Vermentino grapes, grown in Sulcis on sandy and clayey soils. The harvest is early (between mid and late August) to preserve freshness and acidity. After harvesting, the wine is soft-pressed and fermented in steel: the wine ages on the lees for 6-7 months and completes refermentation in the bottle with selected lees for about forty days. During the flowering phase, a liqueur is used that enhances the distinctive characteristics of the original grapes.
Characteristics of this Spumante della Sardegna
From an organoleptic point of view it has a bright straw yellow colour and fine, persistent perlage. On the nose, it is intense and mineral, with notes of hawthorn, white-fleshed fruits, and hints of hazelnut and bread crust; on the palate, it is elegant, savory, and fresh, with good structure and a clean, slightly fruity finish.
