The Moscato d'Asti "Black" of Cantina Enrico Serafino was born in the vineyards located in Santo Stefano Belbo and Mango, in the province of Cuneo. It is a wine produced with 100% Muscat Blanc grapes, grown on clay-loamy soils. After the manual harvest, the bunches are carefully selected and cooled with carbonic snow to prevent oxidation, then they are subjected to soft pressing. The fermentation takes place in stainless steel tanks at controlled temperature and is then interrupted to maintain the sugars and natural aromas of the grape. Then the second fermentation takes place in an autoclave that allows the fermentation.
