This Grillo "Calanìca" from the Sicilian winery Duca di Salaparuta is produced with pure grillo grapes grown in the western part of the island: here the vineyards located at over 200 m u.s.l are of mixed limestone-siliceous composition and enjoy a climate with mild winters and dry summers as well as with a strong temperature range between day and night. The harvest takes place in the month of September, the grapes are then subjected to soft pressing and fermentation for about ten days at 16°C: the grapes are then aged in steel in contact with the yeasts and bottled. After bottling, the wine remains in the bottle for a month in the temperature-controlled cellar so that the typical organoleptic bouquet develops.

On the organoleptic examination this Sicilian Grillo wine shows a straw yellow color with greenish reflections with olfactory notes ranging in the Mediterranean area. On the palate it is fresh and with good persistence.
