From the vinification of Pinot Nero grapes. The origin is the classic one of the prosperous soils, located on the steep eastern and western slopes high above Merano. Only the best wine-growing areas with old vines from fine French clones are able to meet the high expectations of the cellar master. For the vinification, the alcoholic fermentation at controlled temperature takes place in a vat with a wide mouth where the must is moved for about 10-15 days. Malolactic fermentation follows and maturation in small oak barrels and used barriques.
