The vines used for its vinification are represented by a complex blend of grapes which are 64% Merlot, 17% Cabernet Sauvignon , and 10% Cabernet Franc, as well as 9% Petit Verdot. The harvest for the refined Ornellaia winery took place by hand in 15 kg boxes and the bunches were selected on a double sorting table before and after destemming and subjected to a soft pressing at the end. Each variety and each parcel was vinified separately. The alcoholic fermentation took place in stainless steel vats at temperatures between 26-30°C for two weeks, followed by maceration for approximately 10-15 days. Malolactic fermentation began in steel vats and ended after being transferred to barriques (25% new and 75% second passage). The wine remained in barriques in the Ornellaia winery at a controlled temperature for a period of approximately 15 months. After the first 12 months, assembly was carried out and then reintroduced into the barriques where it spent another 3 months. The wine remains in the bottle for six months before being introduced on the market.
Characteristics of the Bolgheri DOC Le Serre Nuove dell'Ornellaia wine
Upon organoleptic examination it presents itself as a wine with an intense and noble ruby red appearance. The aroma is broad and intensely fruity and ripe, underlined by finely spiced and toasted notes. The taste on the palate is rounded and at the same time enveloping. The soft and silky tannins dance in the mouth and give sublime sensations of robustness and body.
