In the core of the Prosecco DOCG area at Valdobbiadene are located these 200 hectares called "Rive di Santo Stefano". In this place the vineyards of the Mionetto winery named “Rive” (slopes) for the characteristic soil which is steep, the grapes are manually picked and they create the Valdobbiadene Prosecco Superiore Rive di Santo Stefano, a Brut Millesimato symbol of the quality of the territory where it comes from. In fact it is cultivated in the Prosecco Superiore DOCG area of Valdobbiadene. It is made by 100% Glera grapes. There is a soft pressing of the grapes and the sparkling process with the Charmat method.
Characteristics of the Valdobbiadene Prosecco Superiore DOCG Rive di S. Stefano Millesimato Brut
It has a straw yellow color with green reflections and a thin and persistent perlage. The smell is luxurious, wide, exuberant and complex with its green apple and pear aromas together with citron and white flowers hints. The taste is acid and sapid with the right content of sugars.
Suggested pairings with this Prosecco Mionetto
It can be a refined appetizer or matched with finger food, raw fish and with the most refined fish. It must be served at 8°C achieved by a gradual cooling. The wine glass must be high and tapered.
