The Rosé Cuvée Brut Metodo Classico is the flegship of the Ca dei Frati company and it is the evolution of the rosa dei Frati. The cuvée is obtained by the laying on yeats for 24 months in bottle where the wine acquires complex aromas. The Groppello, Marzemino, sangiovese and barbera grapes coming from the La Tur and Desenzano del Garda vines are cultivated on calcareous soils mostly clay. The Cultivation method is the Guyot and the profit is 90 quintals per hectare. The wine making process occurs in steel tanks where it is permitted a light maceration touch on the peels. The malolactic fermentation doesn’t occur and the aging lasts 24 months on yeasts.
Characteristics of the Sparkling Extra Brut Metodo Classico
The Cuvée Rosé Brut Ca dei Frati has a proof of 13%, a complex acidity of 6,50 grams per liter and a dry extract of 20,5 grams per liter. This cuvee is elegant and refined with a salty aroma together with little red fruits such as currant and strawberry. The perlage is delicate, thin and sweet. The taste is harmonic, fresh and easy to drink.
