roduction, the grapes come from vineyards located between 400 and 800 metres above sea level, on soils of Dolomite origin with exposure mainly to the south and south-west. After the harvest, the grapes are subjected to a short cold maceration, followed by a soft pressing. Fermentation takes place partly in stainless steel tanks and partly in barriques, a choice that allows for a combination of freshness and complexity. The wine then ripens in the same containers for about eight months in contact with the fine yeasts, acquiring structure and aromatic depth.
Characteristics of this South Tyrolean wine
From an organoleptic point of view, it has a light straw yellow colour with greenish reflections. On the nose it offers a wide and articulated bouquet, in which notes of elderflowers, white peach and shades of dried fruit and more exotic aromas emerge. In the mouth it is characterized by a lively acidity and a marked savouriness, accompanied by a pleasant mineral component that gives balance and momentum. The ending is long, elegant and persistent, with an overall feeling of fullness and finesse.
Recommended pairings with this Franz Haas white wine
As for pairings, this Sauvignon lends itself to even complex dishes, such as tuna tartare, veal tuna, shellfish, and white meats, but it also pairs very well with lightly spiced Asian dishes, thanks to its aromatic intensity and freshness. The ideal service temperature is between 12 and 14 °C, a condition that allows to best enhance its aromatic and gustatory characteristics.
