This wine from Cavicchioli Winery comes from 100% Pignoletto grapes vinification in purity. The origin of the grapes falls within the DOC area of Emilia-Romagna. For the vinification the pressed grapes are cooled with the skins at a low temperature for about 24-36 hours. After the second Charmat fermentation of about 20-25 days, the new sparkling wine continues to refine on its fermentation yeasts for another 4-5 weeks.
