The Champagne Blanc de Blanc Brut from Maison Jean Josselin is fine, elegant and lively. The first word "Blanc" indicates the color tending to light yellow, almost white. The second word "Blancs", strictly in the plural, indicates the exclusive use of 100% Chardonnay white grapes. The highly selected grapes are destemmed and undergo complete malolactic fermentation, with subsequent filtration before bottling. Then the bottles are placed on the pupitre where the Blanc de Blancs ages on the lees for at least three years before disgorgement.
Features of this Champagne
In the glass it has a very fine perlage and a light yellow color with slight green reflections. The nose is persistent, intense with notes of apricot, almond and spices that are well linked to the minerality perceived in the mouth.
Recommended pairings tasting this Champagne
It goes very well with fish bites and appetizers not too fat. To be served at a temperature of 8ºC in a tapered glass.
