Passito "Ispirazione" Nino Negri

This sensational Nino Negri Valtellina wine is made by 50% of Muscat Blanc à Petits Grains and the 50% of Sauvignon Blanc grapes. The cultivation soils are located at south at the feet of the Alpes on the right side of the Adda River and the grapes are picked at the end of November in boxes of 3 kg. Already during the picking the grapes has the noble mold. The wine making process starts in February and the grapes are softly pressed. The must rests for some days. There is an elevate presence of sugars of the 18%. The must ferments for one month. The profit is 30%. Finally it takes place the maturation for 18 months in new French oak barrels.

Characteristics of this Passito “Ispirazione” produced by the Nino Negri winery

It has an intense, deep and bright gold color. The smell has apricot jam and alpines herbs aromas. It is thick and balanced. The taste has ripen fruit aromas and a persistent aftertaste.

Suggested pairings with this great passito

This passito “Ispirazione” is a meditation wine and it can also be matched with mousse, bakery, fruit pies and flavored cheeses. It must be served at 8°C. It can be aged for 2-3 years and it improves its characteristics.
